Our Story
Chaos Cellars is a boutique winery dedicated to natural practices and small-lot production. Our mission is to make wine rooted in tradition and inspired by curiosity. Both of our debut wines reflect Will’s belief that great winemaking starts with respecting the grape and a willingness to adapt in the cellar.

Will Jenkins
Will Jenkins brings a unique blend of traditional craftsmanship and innovative experimentation to Finger Lakes winemaking. A proud graduate of FLCC's Winemaking and Viticulture program, Will has honed his skills across some of America's most prestigeous wine regions.
2023 Experience
Napa Valley
In Napa's famous Knight's Valley, Will completed his first harvest internship helping to produce ultra-premium Cabernet Sauvignon, Pinot Noir, and Chardonnay.
2024 Experience
Sonoma Coast
In the foggy hills of the Russian River Valley, Will spent his second California harvest internship producing Pinot Noir in the remote redwood forest.
2025 Experience
Oregon
In the Beaver State's Willamette Valley, Will makes his third trip west - now to learn Pasific North-West style Rieslings and other varietals.
